Gourmet lovers are in for a treat: from 28 October to 2 November 2025, Blue Ginger, the Asian restaurant at Trou aux Biches Beachcomber Golf Resort & Spa, will welcome Chef Éric Ticana, a rising star in Franco-Asian cuisine, for the third time.

A special dinner on 31 October

The highlight of his visit will be an exclusive dinner on Friday 31 October 2025, crafted in collaboration with Executive Chef Guillaume Brégeat. Designed as a sensory journey, the menu will pair innovative dishes with carefully selected wines and sakes. New signature dishes for the Blue Ginger menu

During his stay, Chef Ticana will also collaborate with the Blue Ginger team to create new recipes for the menu. Guests can enjoy his signature creations, including: Roasted aubergine with miso Nasu Dengaku; Exotic California roll with lagoon croaker; Ponzu and truffle salmon tartare; Rainbow sashimi (salmon, tuna, croaker). This is an exceptional culinary experience where Asian flavours meet the Indian Ocean, brought to you by Beachcomber.
