Royal Palm Beachcomber Luxury unveils its pastry creations for the festive season. This year, Pastry Chef Stephan Baptiste has imagined two original creations, irresistible invitations to indulgence: a Christmas Yule Log bursting with freshness and an Epiphany Cake with exotic, sunny notes.

The Frosted Raspberry Yule Log
Inspired by the magic of winter, this year’s Yule Log takes on a traditional silhouette adorned with delicate snowflake patterns - a subtle nod to the festive season. Beneath its elegant exterior lies a flourless sponge for lightness, a hazelnut crunch for contrast, a vibrant raspberry confit, and a smooth Madagascar vanilla cream. Raspberry takes centre stage, its freshness and vivid colour embodying conviviality and celebration. Paired with vanilla and hazelnuts, it delivers a refined yet generous tasting experience.

The Indulgent Banana GaletteÂ
Staying true to tradition with its crisp puff pastry and almond frangipane, this galette is given a Mauritian twist through a silky banana purée, a tribute to the island’s terroir. Topped with Madagascar vanilla whipped cream, it balances indulgence with elegance. Shaped in the form of a log, it offers a modern reinterpretation of the classic galette, making Epiphany an occasion of unique flavours.

Since July 2022, Stephan Baptiste has been delighting guests at Royal Palm Beachcomber Luxury. After more than a decade at Victoria Beachcomber Resort & Spa, he perfected his craft in Belgium alongside renowned chefs, including at the two-Michelin-starred restaurant Le Chalet de La Forêt.
