Fabio Zanforlini has been treating guests at Shandrani to his authentic Italian cuisine since joining the team in 2006. He was promoted to Executive Chef in 2008, and keeps a vigilant and experienced eye on the hotel’s kitchens.
Earlier in his career, the Italian-born chef travelled across Europe, soaking up experience and perse cooking and managerial techniques in five-star restaurants and resorts. Prior to moving to Mauritius, he has worked with the teams of prestigious establishments such as The Carenage Bay Resort (a five-star hotel in St Vincent & Grenadines in the Caribbean), Hotel Ermitage (a five-star hotel in Italy) and Hotel Manapany (a four-star hotel in St Barthelemy), to name a few.
Chef Zanforlini will use the precious experience gained from travelling to the different regions of his native country, complemented by vast international influences, to maintain the high standards, creativity and persity in the kitchens of Dinarobin.
