New Executive Chef for Royal Palm Beachcomber Luxury

Beachcomber Resorts & Hotels is pleased to announce the appointment of William Girard as Executive Chef of Royal Palm Beachcomber Luxury. 

Chef Girard has 25 years of industry experience with an extensive background in Michelin-starred restaurants, working alongside great names of French cuisine. He takes up his new position in charge of the kitchens at Royal Palm Beachcomber Luxury, a member of The Leading Hotels of the World and a flagship hotel in Mauritius, on 1st February 2022.

Chef Girard was trained at the Biarritz Hotel School and has run the kitchens of some of the world’s most prestigious hotels and restaurants, including Le Barthelemy Hotel in Saint Barthelemy, Sofitel Paris Le Faubourg in France, Burj Al Arab in Dubai, Sofitel Bangkok Silom in Thailand as well as the Michelin-starred restaurants, Le Taillevent and L’Elysée, in Paris with Chef Alain Solivérès. He worked for many years with the Michelin-starred chefs, Yannick Alléno and Guy Martin on the opening and pre-opening of various renowned hotels.

As a winner of the International Accor Cooking Contest in 2000, he brings his extraordinary passion and experience of food and lifestyle to Royal Palm Beachcomber.

“I am looking forward to joining this talented and beautiful brigade. Royal Palm Beachcomber enjoys a distinguished reputation and it is an honour to follow in the steps of great chefs like Michel de Matteis, who has overseen the hotel’s kitchens for years. My goal is to continue to promote Royal Palm Beachcomber’s fine cuisine with the team and to surprise our guests every day,” says Chef Girard.

He will be supported by the 5-star hotel’s experienced kitchen team to forge new culinary signatures.

“It will be a blend of contemporary French cuisine with the fresh and subtle flavours and nuances of the Mauritian terroir. Local produce such as lobster, camaron (freshwater prawns) and fish from the Indian Ocean will take centre stage,” he adds.

Royal Palm Beachcomber Luxury is delighted to welcome Chef William Girard at the helm of its three restaurants. “His experience and vision will be key to continuing Royal Palm Beachcomber’s tradition of culinary excellence,” says the General Manager, Isabelle Bouvier.
